Pancake day – Our favourite recipe

Im not going to lie, pancake day (or shrove tuesday as its officially know) has to be one of my favourite days! How can it not be? I luuuuuuurve food especially puddingy stuff 🙂 and when you have 5 sets of helping hands it certainly makes things more fun!

But then you have to choose – do you have sweet pancakes with maple syrup, ice cream, chocolate chips, chocolate spread or even fresh berries. Or do you have savoury pancakes with toppings like cheese or caramelised onions? (my sweet tooth can’t even imagine pancakes without something sweet on them!)

Miles helped us make pancakes for the little ones today. We got our recipe off BBC Goodfood this one makes thin pancakes (UK style) I much prefer fluffy pancakes / american pancakes but I lost the battle this time.

Our Favourite Pancake Recipe

Method

  • STEP 1

    Put 100g plain flour, 2 large eggs, 300ml milk, 1 tbsp sunflower or vegetable oil and a pinch of salt into a large bowl or large jug, then whisk to a smooth batter.

  • STEP 2

    Set aside for 30 mins to rest at room temperature if you have time, or start cooking straight away.

  • STEP 3

    Set a large frying pan or crêpe pan over a medium heat and carefully wipe it with some oiled kitchen paper.

  • STEP 4

    When hot, cook your pancakes for 1 min on each side until golden brown, keeping them warm in a low oven as you go.

  • STEP 5

    Serve with lemon juice and caster sugar, or your favourite filling. Once cold, you can layer the pancakes between baking parchment, then wrap in cling film and freeze for up to 2 months.

We had great fun making (and eating) our pancake day creations today (although I did end up with the dud first pancake – why is it always rubbish?) 🙂 Nutella was definitely the most popular choice of topping today though, personally I prefer maple syrup. Hhhmmm now what to give up for lent???
